How to brew oolong (gongfu and western)

Pick your style

For aroma and clarity use gongfu. For convenience use western brewing (mug/teapot).

Temperatures

Green oolongs: 85–95°C. Roasted oolongs: 95–100°C.

Gongfu recipe

1g per 15–20 ml. Infusions: 5–10s, then add 2–5s each round.

Western recipe

2–3g per 250 ml, 2–3 minutes. If bitter — cooler water or less time.
